Binulo was first established in Clark, Pampanga by Augustine Roa and Aniela Tolentino; and now, they’ve brought the rich culinary heritage of Pampanga to the south of Metro Manila.

“At Binulo Tagaytay, we are passionate about sharing the vibrant flavors and traditions of Kapampangan cuisine with our community,” said Augustine Roa, co-founder of Binulo Tagaytay. “We are excited to embark on this new chapter in Tagaytay and look forward to welcoming guests to experience the true essence of Pampanga’s culinary heritage.”

Binulo Tagaytay sits along the main road of Tagaytay, and you’ll easily spot this spacious standalone restaurant.

The restaurant itself is spacious and has lots of tables for all the families and groups who want to dine in. Still, there can be a bit of a wait during the weekends (not surprising) so make sure to reserve a table if you’re visiting on the weekend.

Binulo has multiple dining areas, so you can choose where you’re most comfortable with. There’s the main area right by the entrance that caters to smaller groups.

Going further into the restaurant, there are more tables that are perfect for bigger groups, easily accommodating up to a dozen people. And if you want extra privacy, or you’re planning on an intimate celebration, Binulo Tagaytay also has a private function room you can book.

The restaurant features a modern look with a lot of traditional Filipino elements and artwork. It’s a great space for family Sunday lunches and romantic dinner dates.

We’d recommend that you start off your feast with a few mouthwatering appetizers such as the Pititian with Atsara (PHP 420), Pampanga’s version of crispy chicharon; and the healthier Paco Salad (PHP 470).

Of course, you can’t dine at a Kapampangan restaurant without trying their savory Pork Sisig (PHP 530)! It’s definitely not like the mayonnaise-drenched sisig you might be used to in the city, so this is one dish you have to try.

Speaking of Kapampangan classics, there’s a bunch of dishes you can choose from—some of them you might not even have heard of!

If you want to explore, maybe try the Batute (PHP 550), a Kapampangan delicacy of deep-fried stuffed frogs.

Have the guts to experiment with something more unique? Try Binulo’s seasonal Kamaro (PHP 700) which is a plateful of deep-fried exotic mole crickets.

These two dishes can instantly make your Binulo experience unforgettable, but of course you have to try their Bulo specialties as well.

Binulo is actually a traditional method of cooking food inside a fresh bamboo stalk called “bulo”—it was a cooking method inspired by the indigenous Aetas. You can try some traditional dishes in Binulo, and even watch them cook!

Our instant favorite was the Pangat na Ulang (PHP 870), a hearty dish featuring massive river prawns cooked in sour lemongrass broth. It’s like a milder version of sinigang, and with mouthwatering and delicious river prawns (a lot bigger than the usual prawns).

The perfect partner to that would be their Binulo Rice (PHP 220), white rice wrapped in banana leaves then cooked inside the bamboo.

To finish your authentic Kapampangan feast, try the Sampelot or a much thicker version of the classic ginataang bilo-bilo.

You can also try some fresh fruit shakes or some artisan beers from their sister company, Papa Bolo.

And right before stepping out of the restaurant after your meal, you can shop at their store for take home delicacies, snacks, and even frozen Kapampangan dishes to cook at home!
